Hmmm….split peas and pennies? Sounds like an odd recipe if you ask me. But with a quick dig through your spare change, a poke around the pantry, some 3P imagination and a little luck of the Irish…a simple and adorable St. Patty’s centerpiece comes to life.

Gather your go-to trifle dish, individual dessert dishes, or even a hurricane glass or two…and fill with your spring-green leftover lentils…about 1/2 to 3/4 of the way full. If you need a bit of a “base” to fill larger glasses, first add a layer of green tissue before adding your peas. This will give a bit of depth and pop of color.

Take a pocketfull of pennies, and carefully slide them individually around the edges of your peas so that they show along each side. Keep them equi-distance apart for balance…and follow along until you’ve come full circle.
