They say everything comes back around…Jessi and I are always rediscovering dessert recipes past to reinvent. The truth is, neither of us are pastry chef savvy and our last course of the meal needs to be super simple or bakery-bought beautiful. What we once nicknamed Jello cake has now been updated to Jello Poke Cake, and what’s usually red Jello infused cake…3P transformed with a twist of lime to make this no fuss cake turn Leprechaun lovely.
Lime Jello + boxed white cake mix + lite Cool Whip gone green!
We travelled with this dessert to visit friends and while everyone commented that they “hadn’t had this dessert in a dog’s age” (LOL guess we’re dating ourselves again)…bottom line: it was all gobbled up! It’s easy to be green just in time for Ireland’s favorite holiday…Here’s the easy how-to on this “poke” cake:
1 pkg. white cake mix
1 cup boiling water
1 pkg. (3 oz.) JELL-O Lime
1/2 cup cold water
1 tub (8 oz.) Cool Whip Whipped Topping, thawed
a few dashes of green food coloring for color!
Prepare cake batter and bake as directed on package for 13×9-inch pan. Cool cake in pan 15 min. Pierce cake with large fork at 1/2-inch intervals.
Add boiling water to gelatin mix in small bowl; stir 2 min. until completely dissolved. Stir in cold water; pour over cake. Refrigerate 3 hours. Frost cake with Cool Whip. Refrigerate 1 additional hour. **3P Speedy Tip: If you’re trying to get dessert ready in a rush, as we were…use the “Speed Set” Jello method on the back of the box. By using ICE instead of cold water…Jello will set faster, reducing the refrigeration time by more than half!**
