Monday Night “Lights”: Changing The Gameplan with Lighter Football Fare!

Posted on Sep 27 2014 - 7:30pm by Jessi Meehan

3P is in the game to share two tasty sports-time snacks with all of the flavor and none of the guilt! Featuring a fresher, lighter take on fried wings and heavy dips, without sacrificing taste. We cooked up spicy “naked” buffalo chicken tenders and a creamy tangy blue cheese dip in under 30 minutes. Just in time to watch the game and enjoy! Join the healthy huddle and check out how it all played out:

First play of the game: Low-Fat Blue Cheese Dressing/Dip Courtesy of SkinnyTaste.
Makes 1.5 cups…only 45 calories per 2 tbs serving!

3/4 cup crumbled blue cheese
8 oz fat free Greek yogurt
1 tbsp light mayonnaise
1 tbsp lemon juice
1 tbsp white wine vinegar
1/8 teaspoon garlic powder
salt and freshly ground black pepper

In a small bowl, mash blue cheese and yogurt together with a fork. Stir in mayonnaise, lemon juice, vinegar, and garlic powder until well blended. Season to taste with salt and pepper.

Next up in the playbook: “Naked” Buffalo Chicken Tenders Courtesy of Skinny Taste.
Serves 2-4, only 110 calories per 2 tenders!

1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp chili powder
1/8 tsp black pepper
1/2 tbsp oil
8 strips chicken tenderloin (12.5 oz)
1/4 cup Frank’s Hot Sauce

Combine garlic powder, paprika, chili powder and black pepper in a medium bowl. Season chicken with spices and toss to evenly coat the chicken.

Heat half of the oil in a large non-stick sauté pan over medium-high heat, when hot add half of the chicken and cook until golden, about 3-4 minutes, turn chicken and cook until center is no longer pink. Set aside; repeat with remaining oil and chicken.

Pour the hot sauce over the chicken tossing well to coat.

Serve IMMEDIATELY! Lean chicken tenders are tasty, but can dry out quickly, and lose heat fast…be sure to plate them quick and get them into the game so guests can gobble them right up. Serve with celery and carrot sticks for dipping in your tangy dip!

These game-changers are sure to be a touchdown, even with some of the pickiest football food fans! How do you lighten up your game-day favorites?
