Simple Sweetheart Dinner for Four

We often like to break up the week by having a few friends over for dinner. The 3P Event Basic for entertaining on a work day is to keep it simple!

*One pot dishes work really well! Our menu was a crockpot pot-roast, veggie platter, and fresh bread.


*Set a simple table with existing decor that will come together quickly. We used our “Valentine’s Table Decor in a Bowl”, shown in our last post HERE!





**3P Event Basic: using boxes of Conversation Hearts that we had on hand doubled as favors and place cards and when popped in wine glasses created dimension and polish. By adding a flattened gift bag under our center piece in themed colors, it anchored our centerpiece to the table.

We tried a new recipe: Individual Brownie Trifles from Better Homes and Gardens…and we decided it’s a keeper that we would share with you! We used some elegant water goblets, and lightened the recipe below so it was guiltless. You can view the recipe here: Individual Brownie Trifles


2/3 cup of whipping cream (We omitted the next 3 Ingredients by using low-fat Cool Whip!)
1 tablespoon of sugar
1/4 teaspoon of vanilla
8 2×2 inch purchased baked brownies, crumbled into pieces (about 2 cups)
2 cups of fresh raspberries or dark sweet cherries, pitted (We used fresh raspberries)
1 cup of chocolate ice cream topping (We drizzled lightly!)
Unsweetened cocoa powder (Optional: we decorated each trifle with extra raspberries in a heart on top!)

Directions: (We skipped the cream-making by using Cool-Whip)

1. In a chilled large mixing bowl combine whipping cream, sugar, and vanilla. Beat with an electric mixer on medium speed until soft peaks form; set aside.

2. Divide half of the crumbled brownies between 4 large parfait glasses or water goblets. Divide half of the raspberries, ice cream topping, and whipped cream between the glasses, creating layers. Repeat layers with remaining brownies, raspberries, ice cream topping, and whipped cream. If desired, sprinkle with cocoa powder. Serve immediately or cover and chill up to 4 hours.


All said and done, we enjoyed a simple sweetheart dinner for four with our friends Linda and Ron. It was a heartfelt evening that was especially sweet when the girls won at cards!
