Coconut milk creates a creaminess without adding calories, and this tasty thai specialty is ready in under 30 minutes!

This creamy and flavorful soup, is packed full of flavor yet light on the waistline. On a cold night during a recent visit, Gavin and Carla stirred up their version of this different and delectable dish. We couldn’t get enough! The whole pot was gone in a day, as we warmed up and sipped away. Served with fresh cilantro and a squeeze of lime…it’s become a soup-staple in this house!

2 tablespoons grated fresh ginger
1 stalk lemon grass, minced
2 teaspoons red curry paste
4 cups chicken broth
3 (13.5 ounce) cans coconut milk
1/2 pound fresh mushrooms, sliced
2 tablespoons fresh lime juice
salt to taste
1/4 cup chopped fresh cilantro
additional chopped cilantro + lime wedges to garnish

1. Heat the oil in a large pot over medium heat. Cook and stir the ginger, lemongrass, and curry paste in the heated oil for 1 minute. Slowly pour the chicken broth over the mixture, stirring continually. Simmer for 15 minutes. Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are soft, about 5 minutes. Stir in the lime juice; season with salt; garnish with cilantro.

Having a few girlfriends over for a quick bowl of warm soup and a fun and easy fitness routine is the perfect way to keep resolutions kickin’ through the New Year! Invite over an instructor for a private class, or even pop in a DVD and follow along. Gaiam offers amazing DVD’s for Tai Chi and Yoga…at unbelievable prices!

Pay healthy homage to Thailand’s Full Moon Party by taking a mindful moonlit prayer walk with a friend adorned with glow bracelets. A quiet stroll under the light of the moon provides time to reflect, give thanks, and move forward with spiritual guidance in the New Year. 3P Fit Tip: Glow necklaces or bracelets add party pizazz in a flash. An inexpensive and simple way to spice up an outdoor evening walk or class. Try your Tai Chi outdoors in the evening with glow bracelets! I hosted a lady’s “fit event” at home where we rocked our glowing colors and each participant looked like a beautiful butterfly as we moved through the motions! These glow bracelets are easily and inexpensively purchased from any party store, and when kept in the freezer…will “keep on glowing” for months to come. I recently went on a moonlight prayer walk with my friend Julie, adding glow braclets to our walk added a touch of event flair, while lighting up our paths as we lit up our souls.

Welcome health, wealth and happiness in 2015!
