“Thai” in Health 3 Ways in 2015!

Health, exercise, weight loss….ugh. Here’s a few how-to’s to look forward to, rather than procrastinate. Boil up a batch of Thai Coconut Soup in a flash, and invite gal-pals over to attend a Tai-Chi class…or even invite a friend for a moonlight prayer walk as you meditate a healthy lifestyle. Celebrate Thailand’s famous Full Moon Party  in your own practically perfect style.

Coconut milk creates a creaminess without adding calories, and this tasty thai specialty is ready in under 30 minutes!

This creamy and flavorful soup, is packed full of flavor yet light on the waistline. On a cold night during a recent visit, Gavin and Carla stirred up their version of this different and delectable dish. We couldn’t get enough! The whole pot was gone in a day, as we warmed up and sipped away. Served with fresh cilantro and a squeeze of lime…it’s become a soup-staple in this house!

INGREDIENTS:
2 tablespoons grated fresh ginger
1 stalk lemon grass, minced
2 teaspoons red curry paste
4 cups chicken broth
3 (13.5 ounce) cans coconut milk
1/2 pound fresh mushrooms, sliced
2 tablespoons fresh lime juice
salt to taste
1/4 cup chopped fresh cilantro
additional chopped cilantro + lime wedges to garnish

DIRECTIONS:
1. Heat the oil in a large pot over medium heat. Cook and stir the ginger, lemongrass, and curry paste in the heated oil for 1 minute. Slowly pour the chicken broth over the mixture, stirring continually. Simmer for 15 minutes. Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are soft, about 5 minutes. Stir in the lime juice; season with salt; garnish with cilantro.

I recently went on a moonlight prayer walk with my friend Julie, adding glow braclets to our walk added a touch of event flair, while lighting up our paths as we lit up our souls.
