The Lighter Side of Easter Brunch: 3P’s Favorite Fresh & Healthy Salads!

Easter brunch can be a little on the heavy side with all of the eggs, meat, potatoes, breads, etc. So what we love to do is add just a bit of fresh veggies and fruit to our spread. We’ve got two healthy and light recipes that we’ve deemed “keepers” that we’d love to share with you. The first time we made this Italian Bean Salad, we couldn’t believe how easy it was,  and how fast it went once we served it! We saved the magazine it came in, and wrote a big note to ourselves on the page: “KEEPER!”

3P Tip: This dish can be made well ahead of time and kept in the fridge. The flavors will marinate, and the beans will keep crisp for hours.

ITALIAN-BEAN-AND-TOMATO-SALAD

Fresh Italian Bean and Tomato Salad:

Time Prep: 15 min
Total: 1 hr 15 min
Servings total: 6 servings, 1 cup each

What you need:
2 cans (15 oz. each) white beans, rinsed
2 cups cut fresh fresh green beans (1-inch)
6 plum tomatoes (1 lb.), chopped
1/2 cup KRAFT Lite House Italian Dressing
2 Tbsp. chopped fresh basil
2 Tbsp. KRAFT Grated Parmesan Cheese

How to make it in TWO Easy Steps!

Just combine beans, tomatoes and dressing in a bowl, and REFRIGERATE 1 hour.

TOP with basil and cheese just before serving.

And for a fresh fruit salad that even the kids will love, with a built-in bowl…give this recipe a try. It helps to lighten up some of the heavier brunch dishes, and just the right amount of sweet and tangy!

Fruits Salad In Pineapple

Fresh Fruit Salad in a Pineapple!

Ingredients
1/2 cup Orange Juice
2 cups pineapple
1/2 pint fresh blueberries
1/2 pint fresh raspberries
1 pint fresh strawberries, hulled and cut in half
1 bunch seedless green grapes, halved

3P Tip: We also like to add kiwi or melon for additional color and freshness, but you can add any fruit you like to this dish. Be sure to add the orange juice or a tiny bit of lemon juice as this helps if you’re adding apples or any kind of fruit that can brown. 

Directions:

Cut your pineapple in half length wise, and carefully slice and scoop out the fruit to make a bowl. Combine the orange juice and pineapple chunks in a separate bowl. Add the berries and grapes and gently mix the fruit mixture together. Spoon the fruit into your pineapple and serve!
