3P “Sounds Off” with A Tasty Spin on St. Patty’s Day Leftovers: Bubble and Squeak!

Ready for a little “bubble and squeak”? This cleverly named English dish is similar to Irish “Colcannon”…and is the best way to use up St. Patrick’s Day leftovers! A traditional veggie and potato fry-up that gained it’s name not only from the “bubble and squeak” sounds made while cooking…but also from the “bubble and squeak” that can occur after eating…but so yummy it’s totally worth it! They say…”beans beans the magical fruit”…but this tasty cabbage leftover might give beans a run for their money! LOL

This very “vocal” veggie “hash” has a few main ingredients…usually  potato and cabbage, but carrots, peas, brussel sprouts, or any other leftover vegetables can be added. The chopped vegetables (and cold chopped meat if desired) are fried in a pan together with potatoes until the mixture is well-cooked and brown on the sides. Best served with cold leftover roast or corned beef, a few pickles, some traditional British beans, or some good ol’ HP sauce.

Take a gander at this old-school favorite, straight from our Gramma Kathy’s kitchen:

INGREDIENTS: Serves 4-6
2 tbsp olive oil
Leftover mashed or boiled potato
Any leftover vegetables, cabbage, carrots, peas, Brussels Sprouts, finely chopped (Be sure to drain cabbage and veggies of any liquid)
Salt and freshly ground black pepper
Worcestershire sauce
Cold sliced meat, pickles, etc

Bubble and squeak can also be fried into a single pie, featured here…more of the Irish Colcannon variety with greens.

1. Heat oil in a non-stick pan, allow it to get nice and hot, add the onion and garlic.
2. Next, add the potato.
3. Next, add cabbage and veggies let it colour slightly. About take 5-6 mins.Work everything together in the pan and push it down so that the mixture covers the base of the pan – allow the mixture to catch slightly on the base of the pan before turning it over and doing the same again. It’s the bits of potato that catch in the pan that define the term ‘bubble and squeak’, so be sure to allow to brown. Scramble into a “hash”…and crisp up for a few more minutes and serve!

Serve with beans, extra veg, cold meat, and sauce! Happy Squeaking!
