A Dip in The Pool with Ahhh-mazing Avocado Bean Dip + Fresh Fruit Infusion Water

It has been seriously HOT HOT HOT here in Vegas, so hot that we’ve even taken our 3P lunch breaks and moved them to the pool! Cool snacks and cold drinks are where it’s at this August! We’re keeping it fresh and healthy with Rena’s Avocado Bean Dip, and seriously refreshing infused water with grapefruit AND grapes! This Fruit Infusion Pitcher is where it’s AT! 😉

First off, let’s take a dip in the pool with Rena’s Avocado Bean Dip! To mix up this total crowd pleaser…(we doubled this recipe for our big crew…and it was ALL gobbled up in no time!) You’ll need:

– 2 Avocados
– 1 Chopped sweet onion, vidalia
– 1 Can black beans, drained and rinsed
-1 Can corn, drained
– A handful of chopped fresh cilantro
– 2 tablespoons of olive oil
– Salt to taste
– (We added a squeeze of lime for flavor, and to keep our avocado from browning)
– Tortilla chips to serve with!

Carefully combine all of your ingredients into a large mixing bowl. Gently fold the ingredients over one another as to avoid anything going mushy, and then squeeze your lime over top. Serve chilled, with tortilla chips! QUE BUENO!

Now, to quench a serious thirst by the pool in this heat…we’ve been reaching for our Fruit Infusion Pitcher! You can buy your own from Target or Bed Bath and Beyond for under $20 HERE and HERE!

These pitchers are fanTASTIC for fruity flavored water, naturally! No added sugar, no nonsense. Simply add your desired fruit to the inner infusion tube, attach it to the lid, fill your pitcher and drop the lid in! We chose to make our water really taste “grape”…LOL. You could use lemon, cucumber, watermelon or berries to create your own! Our Gavin and Carla love infused cucumber water. 🙂

Fill a bright and pool-safe plastic cup, and add fresh fruity garnish…and you’re in the business of vacation-like relaxation now!

    OMG what a great dip in looks and I am sure it taste delicious!!
    another addition for our cottage dips!!
    Your water with fruit or vegetable infusion is another way to add a little fun and flavour to the just plain water!!!
    Great ideas…..For our typical cool and rainy summer in Canada.
    Anything to brighten up the spirit!!!!! Tania
